Easy Stuffed Pepper Casserole

This Easy Stuffed Pepper Casserole brings all the flavor of classic stuffed peppers—with none of the extra steps! It’s hearty, cheesy, and perfect for a quick weeknight meal the whole family will enjoy.

Ingredients

  • 1 pound ground beef
  • 2 bell peppers, chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 (15 oz) can low sodium beef broth
  • 1 (15 oz) can diced tomatoes
  • 1 cup uncooked long grain white rice
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup mozzarella cheese, shredded
  • 3/4 cup cheddar cheese, shredded

How to Make Stuffed Pepper Casserole

  1. Cook the Beef: In a large skillet, cook the ground beef, breaking it apart. When mostly cooked, add onions and bell peppers. Cook 5–10 minutes until softened.
  2. Add Garlic: Stir in minced garlic and cook for 1–2 minutes until fragrant.
  3. Combine Ingredients: Stir in beef broth, diced tomatoes, rice, Worcestershire sauce, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  4. Simmer: Cover, reduce heat, and simmer for about 20 minutes, stirring halfway through, until rice is tender.
  5. Add Cheese: Stir half of the mozzarella and cheddar into the cooked casserole until melted.
  6. Top and Melt: Sprinkle remaining cheese on top. Cover until melted or place the skillet under a broiler (if oven-safe) to melt quickly.
  7. Serve: Remove from heat and serve immediately. Enjoy!
