Easy Stuffed Pepper Casserole

Ingredients
- 1 pound ground beef
- 2 bell peppers, chopped
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 (15 oz) can low sodium beef broth
- 1 (15 oz) can diced tomatoes
- 1 cup uncooked long grain white rice
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 cup mozzarella cheese, shredded
- 3/4 cup cheddar cheese, shredded
How to Make Stuffed Pepper Casserole
- Cook the Beef: In a large skillet, cook the ground beef, breaking it apart. When mostly cooked, add onions and bell peppers. Cook 5–10 minutes until softened.
- Add Garlic: Stir in minced garlic and cook for 1–2 minutes until fragrant.
- Combine Ingredients: Stir in beef broth, diced tomatoes, rice, Worcestershire sauce, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
- Simmer: Cover, reduce heat, and simmer for about 20 minutes, stirring halfway through, until rice is tender.
- Add Cheese: Stir half of the mozzarella and cheddar into the cooked casserole until melted.
- Top and Melt: Sprinkle remaining cheese on top. Cover until melted or place the skillet under a broiler (if oven-safe) to melt quickly.
